Description

  • 4 lices rye bread
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Thousand Island dressing or Russian dressing
  • 4 lices swiss cheese
  • ½ cup coleslaw prepared
  • dill pickles optional, sliced
  • 6 ounces corned beef deli or cooked homemade, sliced

Instructions

  1. Heat the corned beef in the microwave or a nonstick skillet over medium-low heat until warm. This is optional.
  2. Lightly toast bread. Spread 2 slices with dijon mustard.
  3. Layer with swiss cheese, corned beef, coleslaw and dill pickle slices.
  4. Spread thousand island dressing on the remaining 2 slices.
  5. Top sandwiches and serve with a pickle.

Notes

  • Corned beef can be leftover or thinly sliced from deli meat and used as is or warmed.
  • Homemade Thousand Island dressing can be made by combining mayonnaise, ketchup, sweet pickle relish, white vinegar, sugar, and onion powder.
