Corned Beef Sandwich
Description
This sandwich uses either deli-sliced or homemade corned beef that is warmed gently before assembly. Rye bread is lightly toasted, with Dijon mustard spread on two slices and Thousand Island dressing spread on the other two. Swiss cheese, the warm corned beef, prepared coleslaw, and optional dill pickle slices are layered to create a balance of salty, tangy, creamy, and crunchy elements.
The coleslaw provides moisture and a fresh texture contrast to the dense corned beef and melted Swiss cheese, while the mustards add a sharp and creamy tang respectively. The sandwich can be served immediately with pickles on the side, enhancing the meal with additional acidity and crunch.
Homemade Thousand Island spread can be prepared by mixing mayonnaise, ketchup, sweet pickle relish, white vinegar, sugar, and onion powder for authenticity when a store-bought alternative is unavailable.
Ingredients
- 4 lices rye bread
- 2 tablespoons Dijon mustard
- 2 tablespoons Thousand Island dressing or Russian dressing
- 4 lices swiss cheese
- ½ cup coleslaw prepared
- dill pickles optional, sliced
- 6 ounces corned beef deli or cooked homemade, sliced
Instructions
- Heat the corned beef in the microwave or a nonstick skillet over medium-low heat until warm. This is optional.
- Lightly toast bread. Spread 2 slices with dijon mustard.
- Layer with swiss cheese, corned beef, coleslaw and dill pickle slices.
- Spread thousand island dressing on the remaining 2 slices.
- Top sandwiches and serve with a pickle.
Notes
- Corned beef can be leftover or thinly sliced from deli meat and used as is or warmed.
- Homemade Thousand Island dressing can be made by combining mayonnaise, ketchup, sweet pickle relish, white vinegar, sugar, and onion powder.
