Cornflake Chicken

Cornflake Chicken uses chicken tenders coated in a seasoned crushed cornflake mixture for a crispy baked finish. The coating combines cornflakes ground with smoked paprika, onion powder, and sugar for balanced savory and slightly sweet flavor. Baking at a high temperature crisps the coating while keeping the chicken juicy inside. A milk and egg wash helps the crumbs adhere securely for even crispiness.

Description

This recipe coats chicken tenderloins in a mixture of crushed cornflakes seasoned with smoked paprika, onion powder, sugar, salt, and black pepper. The chicken is first dipped in a whisked milk and egg wash to allow the crumb coating to stick well. Baking on a foil-lined sheet pan coated with spray helps crisp the coating evenly around the chicken.

The result is tender chicken with a crunchy exterior that is flavored with smoky and slightly sweet notes from the seasoning. The use of cornflakes gives a distinct textured crust without frying. Finishing with chopped parsley adds a fresh contrast and color.

This method produces a baked chicken dish ideal for a practical main course that can be served with sides or used in sandwiches. The cooking time is moderate, ensuring the chicken is cooked through and the coating crisped properly without drying out.
