Description

Ingredients
Dry Rub
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon Old Bay seasoning
- ½ teaspoon chili powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
Fish
- 6 white fish ex. basa, haddock, halibut (approx. 3 lbs) fresh or frozen, fillets
- 2 cups corn flakes
- 1 cup flour pinch of salt and pepper
- 1 cup salt
- 1 cup black pepper
- 2 egg whisked
- cooking spray
Instructions
- If using frozen fish, thaw and pat dry with a towel. Depending on the size of the fish cut into smaller pieces as desired.
- Mix the dry rub ingredients together and sprinkle over both sides of the fish and rub in with hands.
- Prepare a dredging station using 3 bowls. Add the cornflakes to one bowl and gently crush. Add flour, pinch of salt and pepper to another bowl and stir. Add the whisked eggs to the third bowl.
- Preheat Air Fryer or oven to 400°F.
- Using two hands, keep 1 hand for the dry ingredients and one for the wet. First dip the fish into the flour, then the egg, then the cornflakes. Use your hands to gently push down and pack on the cornflakes to ensure they stick well.
- AIR FRYRER COOKING METHODSpray both sides of the fish with cooking spray and add 3-4 pieces to your air fryer (or the quantity that fits). Cook for approximately 15 minutes flipping once halfway through.OVEN COOKING METHOD Prepare a large cookie sheet with a wire rack on top. Spray both sides of the fish with cooking spray and add the pieces of fish on top of the wire rack. Cook approximately 15 minutes, flipping halfway through, until golden brown and cooked through.
