Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup onion diced
  • 1/3 cup bell pepper diced
  • 2/3 cup spinach chopped, fresh
  • 1/2 cup diced tomatoes
  • 4 egg large
  • salt to taste
  • black pepper to taste
  • 1/2 cup cottage cheese low-fat
  • 4 corn tortilla small
  • 4 flour tortilla small
  • avocado optional, sliced; or salsa; or hot sauce

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Add the diced onion and bell pepper, and sauté for 3-5 minutes until softened.
  2. Add the chopped spinach and diced tomatoes, then cook for an additional 2 minutes, until spinach is wilted.
  3. In a bowl, whisk the eggs with a pinch each of salt and pepper. Pour the eggs into the skillet with the vegetables, and scramble until just set.
  4. Lower the heat and gently incorporate the cottage cheese, heating it until warmed through. Adjust the seasonings to taste.
  5. Warm the tortillas in a separate skillet or microwave until soft and pliable.
  6. Evenly distribute the egg and vegetable mixture onto the warm tortillas.
  7. Top with sliced avocado, salsa, or hot sauce if desired. Serve immediately.
