Cottage Cheese Cornbread

This Cottage Cheese Cornbread combines yellow cornmeal, all-purpose flour, and a moist mixture of buttermilk, cottage cheese, eggs, and neutral oil to create a tender, golden cornbread. The inclusion of frozen corn adds texture and sweetness, making it a versatile side dish that can be served warm with butter and honey.

Description

Cottage Cheese Cornbread marries the coarse texture of cornmeal with a soft and moist crumb from buttermilk and cottage cheese. The batter blends all-purpose flour, cornmeal, sugar, baking powder, salt, and baking soda with wet ingredients, producing a balanced rise and sweetness. Adding whole corn kernels adds bursts of sweetness and texture within the bread.

Baked in a preheated skillet with melted butter, the cornbread forms a golden crust while remaining tender inside. It is finished by slicing and serving with additional butter and honey for enhanced flavor. The cornbread’s moistness and crumbly texture make it suitable alongside chili, barbecue, or as a standalone snack.
