  • 1 lb breakfast sausage I used turkey sausage, ground
  • 12 egg
  • 16 oz cottage cheese ~ 2 cups
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • Pinch salt
  • 2 cups spinach chopped
  • 1 cup cherry tomato quartered

Instructions

  1. Preheat oven to 350F. Cook ground sausage on the stove top breaking it into crumbles as it browns. Set aside and allow to cool slightly.
  2. Blend eggs, cottage cheese, garlic powder, onion powder, black pepper and salt in a blender or with an immersion blender.
  3. Pour egg mixture into a greased or parchment lined 9x13 baking pan. Stir in cooked ground sausage, chopped spinach and cherry tomatoes. Stir until the mix ins are evenly spread throughout the pan.
  4. Bake at 350F for 40-42 minutes. Check to make sure the eggs are cooked through by inserting a knife or toothpick into the middle. Allow to cool slightly before cutting it into servings and enjoying.
