Cottage Cheese Pancakes
Description
Cottage Cheese Pancakes start by blending together low-fat cottage cheese, eggs, melted butter, real maple syrup (or sugar), vanilla, rolled oats, baking powder, and salt until a smooth batter forms. The oats add body and a slight chewiness while the cottage cheese lends moisture and a subtle tang. Cooking the batter on a buttered skillet over medium-low heat yields pancakes that are light golden with a delicate texture.
The pancakes are flipped as soon as bubbles form on the top and the edges appear set, ensuring even cooking and a tender center. Serving suggestions include pats of butter, additional pure maple syrup, and fresh fruit to complement the mildly sweet and creamy flavor.
This preparation uses gluten-free oats, but substitutions are possible if desired. The use of cottage cheese introduces protein and creaminess not typical in standard pancakes.
Ingredients
- 2 cups cottage cheese such as Shamrock Farms, low-fat
- 6 large egg
- 2 - 4 Tablespoons butter depending on preference, melted
- 4 Tablespoons maple syrup or sugar, 100% real maple syrup
- 1 teaspoon vanilla
- 2 cups rolled oats (I use gluten-free)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- butter (for griddle or skillet)
Instructions
- In a blender, add cottage cheese, eggs, melted butter, real maple syrup or sugar, vanilla, rolled oats, baking powder, and salt. Blend until completely pureed.
- Heat skillet over medium-low heat. Once it is heated, add a pat of butter to the skillet. Pour pancake batter onto the skillet and watch carefully. Turn as soon as it becomes a light golden brown color and bubbles appear on the top.
- Serve with butter, real maple syrup, and fresh fruit.
