  • 1/2 cup cottage cheese
  • salt to taste, kosher salt
  • black pepper to taste, kosher salt
  • 1 tbsp olive oil

Instructions

  1. Place the eggs and cottage cheese into a bowl and sprinkle with salt and pepper. Whisk until well combined.
  2. Heat the oil in a large non-stick pan over medium-low heat.
  3. Pour the egg-cheese mixture into the pan and start cooking; scramble to your liking. Serve warm with fresh veggies, if desired.
