Cottage Cheese Scrambled Eggs
Description
This recipe combines eggs and cottage cheese whisked together, then cooked slowly in a small amount of olive oil over medium-low heat. The cottage cheese incorporates as the eggs set, lending a creamy texture and mild flavor without overpowering the eggs. The gentle cooking technique helps maintain a tender scramble, avoiding dryness.
The cooked eggs are soft and moist, with a balance of mild creaminess from the cottage cheese and a subtle richness from the olive oil. Bright chives add a fresh herbal note when served.
Serve these scrambled eggs immediately, as they are delicate and best enjoyed fresh. They pair well with toast or a simple vegetable side for a balanced meal.
Ingredients
- 2 large egg
- ¼ cup cottage cheese
- black pepper to taste, crack
- sea salt to taste, sprinkle
- 1 teaspoon olive oil or avocado oil
- chive for serving, fresh
Instructions
- Whisk eggs and cottage cheese together in a small mixing bowl. Add crack of pepper and sprinkle of salt.
- Heat oil in a small nonstick skillet over medium-low heat. Once hot, carefully pour the egg mixture into the pan.
- When the edges start to set, use a rubber spatula to move the eggs towards the center of the pan, continually until the eggs have set and are no longer runny. This should take about 3-5 minutes, depending on your pan and how cooked you like your eggs.
- Remove from heat and serve.
