Cottage Cheese Toast - Sweet, Savory

Cottage Cheese Toast is a delicious breakfast, lunch or snack. It takes less than ten minutes to assemble and is totally customizable.

Ingredients

  • 2 lices bread
  • ½ cup cottage cheese
  • ½ cup fresh berries
  • teaspoon lemon finely grated zest

Instructions

  1. Toast the bread in your toaster, oven, air fryer or toaster oven.
  2. Spread half the cottage cheese on each slice of bread.
  3. Top with the berries and lemon zest. Enjoy.

Notes

  • Nutrition is based on mixed berries and lemon zest as the topping. Other toppings will have different nutritional values.
  • Instead of using the cottage cheese right out the tub, you can whip it in the food processor for a lighter, fluffier texture.
  • You can heat the cottage cheese toast up in the air fryer at 400°F for about 8 minutes. Just heat until the cheese starts to brown and the bottom of the toast is browned.

  • Apple or pear with cinnamon or honey.
  • Sliced bananas with a sprinkle of cinnamon and honey.
  • Mixed berries like, raspberries, blueberries, or strawberries, with lemon zest.
  • Peach with a drizzle of honey or maple syrup and fresh basil leaves.
  • Your favorite jam or jelly. We particularly like apricot or blackberry jam.
  • Avocado toast sprinkled with hot crushed pepper flakes.
  • Smoked salmon or lox with sliced red onion, fresh dill leaves and cucumber slices.
  • Margaretta style: Sliced tomatoes and cucumbers with a balsamic drizzle, a sprinkle of sea salt and freshly cracked black pepper. Top it with fresh basil leaves.
  • Eggs: Make your favorite eggs, hard-boiled, fried, or poached. Hard-boiled eggs are especially good with a sprinkle of sea salt and freshly ground black pepper. If the fried egg yolks are runny, they will be messy, so eat them with a fork and knife.
  • You can even include leftover meat like chicken, pork or turkey. Deli meats would be good, too.
