A simple recipe for delicious cottage cheese waffles to make your breakfast more nutritious.

Ingredients
- ½ cup all-purpose flour
- 1 cup cottage cheese
- 2 large eggs
- 2 teaspoons sugar optional
- 1 teaspoon vanilla extract
- ⅓ cup water or milk
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions
Make the batter:
- Add the flour into a medium bowl and set aside.
- Measure the ingredients in the order listed into your blender jar: cottage cheese, eggs, sugar (if using), vanilla extract, water or milk, baking powder, and salt. Blend for 30 seconds to 1 minute to incorporate all the ingredients.
- Pour the liquid into the bowl with the flour, mixing the flour with the liquid using a rubber spatula. I incorporate the batter, working the flour from the outside of the bowl until everything is just combined.
Cook:
- Heat the waffle mixer and grease it with oil if needed. Using butter will yield brown exteriors. Once hot, pour enough waffle batter to fill the space most of the way -the batter will expand. Close the waffle maker and cook the waffle until the color is golden brown and it lifts easily. Remove each waffle from the waffle maker and repeat the process with the rest of the batter.

- Serve these waffles with your favorite toppings and syrups.
