Country Captain Chicken Recipe

Ingredients

  • 2 tablespoon olive oil
  • 1 pound chicken breast boneless, skinless
  • cup all-purpose flour
  • 1 cup onion diced
  • 1 cup green bell pepper diced
  • 1 cup red bell pepper diced
  • 2 cloves garlic minced
  • 28 ounces diced tomatoes (1 large can)
  • ½ cup chicken broth low-sodium
  • 2 tablespoons curry powder
  • 1 teaspoon paprika ground
  • ¼ cup almonds slivered

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Dredge each chicken breast in flour then place in the skillet.
  2. Allow to cook for 5-7 minutes then flip and cook another 5 minutes. Remove from the skillet and set aside.
  3. Add the onion, peppers, and garlic to the skillet and cook until tender, about 5 minutes.
  4. Add in the diced tomatoes, chicken broth, curry, and paprika then mix well. Bring to a simmer then add the chicken back in.
  5. Simmer for 10 minutes to allow the chicken to reheat.
  6. Remove from heat, garnish with slivered almonds and serve with rice.

Notes

  • Storage: Store country captain chicken in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months.
  • Optional garnishes - fresh chopped parsley or raisins if preferred.
  • This southern recipe is known for its curry seasoning and slivered almonds so don’t skip them!
