Description
Potatoes are cut into half-inch cubes, then tossed with chopped red bell pepper and olive oil alongside salt, black pepper, and garlic powder for seasoning. The mixture spreads in a single layer on a baking sheet and roasts initially for 15 minutes at high temperature to begin browning.
After the initial roast, finely chopped onion is sprinkled over the potatoes and peppers, then the whole pan is tossed gently with a metal spatula to mix and redistributed for continued roasting of 30 more minutes. This approach ensures the onion cooks through and adds a sweeter, aromatic flavor layer while the potatoes develop a crispy, golden exterior and tender inside. A final touch with fresh herbs such as parsley, chives, thyme, oregano, or dill adds color and fresh flavor at serving.

Instructions
- Preheat oven to 450ºF/230ºC.

- Spread in a single layer on a sheet pan or large roasting dish, and cook for 15 minutes.
- Remove from the oven and sprinkle over the finely chopped onion. Use a metal spatula to toss everything together and return to the oven.1 small onion
