Description

The Country Style Meatloaf uses soaked bread instead of dry breadcrumbs to maintain moisture, mixed with ground beef, bell peppers, onions, garlic, eggs, and Worcestershire sauce. This combination forms a tender mixture baked in loaf pans. A glaze of ketchup, brown sugar, and soy sauce spreads atop the loaves, caramelizing in the oven to create a flavorful crust. Baking at 375°F for 50-60 minutes ensures thorough cooking, with resting time allowing juices to redistribute before slicing.

This meatloaf serves well with classic sides like mashed potatoes or steamed vegetables and makes a hearty family dinner. The recipe produces two loaves, suitable for multiple portions or freezing.

For the Meatloaf:

  • ¾ bread loaf
  • 1 red bell pepper seeded, medium diced
  • 1 green bell pepper seeded, medium diced
  • 1 yellow onion peeled, small diced
  • 4 garlic finely minced cloves
  • 3 ½ pounds ground beef 90/10 lean to fat ratio
  • 4 egg large
  • 1 ½ tablespoons Worcestershire sauce
  • salt to taste
  • black pepper to taste

For the Glaze:

  • ¾ cup ketchup
  • 1/3 cup light brown sugar packed
  • 2 tablespoons soy sauce

Instructions

  1. Preheat the oven to 375°.
  2. Add the bread to a pan and completely cover it in water and keep it submerged.
  3. Add the squeezed out wet bread to a large bowl along with the peppers, onions, garlic, ground beef, eggs, Worcestershire sauce, salt and pepper and mix thoroughly until completely combined.
  4. Divide the mixture between to 9x5 prepared loaf pans and pack it in tight. You can line one of the pans with bacon as I did in the video for extra flavor if you prefer.
  5. In a small bowl mix together the ketchup, brown sugar, and soy sauce until combined and add it to the top of the meatloaf and spread around to coat the top.
  6. Bake in the oven at 375° for 50-60 minutes or until cooked throughout and reads 165° internally.
  7. Rest for 3-4 minutes, slice, and serve.

Notes

  • Assemble meatloaf up to 1 hour ahead; keep wrapped and warm at 200°F until baking.
  • Store cooked meatloaf covered in the fridge up to 4 days or freeze for 3 months; thaw overnight before reheating.
  • Reheat covered with a bit of water at 350°F for 8–10 minutes or use the microwave.
  • Firmly press mixture into loaf pans to prevent crumbling after cooking.
  • Ensure internal temperature reaches 165°F; slight pink is acceptable like medium-well burger.
  • Water-soaked bread keeps meatloaf moist, avoiding dryness common with breadcrumbs.
