Ingredients

Servings
  • 3 lbs country-style pork ribs 1.3 kg, Note 2
  • 2 tablespoons brown sugar Note 3
  • 2 teaspoons paprika sweet
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper to taste
  • 1 ½ tablespoons salt fine sea salt
  • 1 teaspoon black pepper ground
  • ½ cup BBQ sauce optional, Note 4

Instructions

  1. Preheat the oven to 325°F/ 160°C.
  2. Rub: Mix all the spices in a small bowl.2 tablespoons brown sugar + 2 teaspoons sweet paprika + 2 teaspoons smoked paprika + 1 teaspoon garlic powder + 1 teaspoon onion powder + ½ teaspoon cayenne pepper to taste + 1 ½ tablespoons fine sea salt + 1 teaspoon ground black pepper
  3. Season: Dry the pork ribs with a paper towel. Rub them well with the spice mixture.3 lbs country-style pork ribs/ 1.3 lbs
  4. Bake: Place the ribs into the baking dish. Cover the baking dish tightly with foil. Bake them in the oven for 2 to 2 ½ hours until very tender. Remove the foil but be careful: the steam is hot!
  5. Broil: Preheat the broiler. Line a rimmed baking sheet with aluminum foil. Transfer the ribs to the baking dish using a slotted spoon. Brush the ribs with pan juices or BBQ sauce. Broil for 3-4 minutes until the ribs are browned to your liking. Always keep an eye on them to prevent them from burning.½ cup BBQ sauce
  6. Serve: Baste them again with pan juices or BBQ sauce and serve immediately.

Notes

  • I recommend using a slotted spoon for transferring the ribs to the baking sheet instead of tongs. The meat is very tender and might fall apart if you try to move it using tongs.
  • Boneless or bone-in country-style pork ribs, about 8 ribs. You can make as many as you can fit into the baking dish in a single layer.
  • Rub: This is my favorite spice rub for ribs. However, you can rub the ribs with just salt and pepper or any other spice mixture you like.
  • BBQ sauce or pan juices: You can baste the pork ribs with BBQ sauce OR pan juices before and after broiling them. Both versions are delicious.
