Description
This approach to Country Style Ribs starts with a dry rub combining chili powder, brown sugar, smoked paprika, cumin, oregano, kosher salt, crushed red pepper flakes, and black pepper. The ribs, sourced from the pork shoulder, are evenly coated with this rub and placed on a foil-lined baking sheet. Covered tightly with foil, they slow-cook at 275°F for about two hours until tender.
After this initial slow bake, excess liquid is drained if needed, and ribs are generously brushed with barbecue sauce. They return to the oven uncovered to cook until very tender and the sauce adheres well. An optional brief broil adds a lightly charred texture to the sauce coating.
The combination of gentle heat and prolonged cooking time breaks down collagen and connective tissues, allowing the ribs to become soft and succulent. The rub's smoky spices and sweet brown sugar complement the barbecue sauce for rich layers of flavor.
Onion or garlic powder and other herbs can be added to the rub if desired. Adjust cooking times based on rib thickness or tenderness. If ribs remain tough, return them to the covered pan and continue baking in 30-minute increments.
Ingredients
- 4 pounds country style pork ribs ensure they are not labelled as loin
- 1 ½ to 2 cups barbecue sauce
Rib Rub
- 1 tablespoon chili powder
- 1 tablespoon dark brown sugar packed
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 teaspoon oregano dried
- 1 teaspoon kosher salt
- 1 teaspoon red pepper flakes crushed
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 275°F. Line a large rimmed baking sheet with foil.
- In a small bowl whisk together chili powder, brown sugar, smoked paprika, cumin, oregano, salt, red pepper flakes, and black pepper.
- Place the ribs on the prepared pan and rub all sides with the rub mixture. Cover tightly with foil. Cook for 1 hour 45 minutes to 2 hours. Open the foil and check the ribs with a fork: they should be tender. If they are still tough, cover and cook for an additional 30 minutes or until they are tender
- Remove the pan from the oven and drain some of the juices if your ribs have a lot of juice. Generously brush the ribs with barbecue sauce.
- Place the pan back into the oven and cook uncovered for an additional 45 to 60 minutes or until the ribs are very tender.
- If desired, turn your oven on to broil and broil the ribs for 3 to 4 minutes or until lightly charred.
Notes
- Only use country style ribs from the shoulder, not loin cuts, for best texture.
- If ribs are tough after initial cooking, cover and bake longer in 30-minute intervals until tender.
- Optional additions to the rub include onion or garlic powder and other preferred spices.
- Ribs can be cooked at 250°F for a longer slow-bake if desired.
