County Fair Funnel Cakes
Description
This recipe for County Fair Funnel Cakes consists of a smooth batter combining eggs, milk, and brown sugar with flour, baking powder, and salt. The batter's consistency allows it to be poured through a funnel in a controlled, spiral motion into 4 inches of 375°F oil, forming irregular but crisp fried shapes. The cakes are fried for about two minutes per side until golden and then drained to remove excess oil.
The final dusting of powdered sugar adds sweetness and a delicate finish. Funnel cakes are enjoyed best warm, maintaining their crisp edges and tender interiors. The pouring through a funnel creates the traditional intricate lace pattern associated with these treats.
For convenience, the batter may be poured directly from a measuring cup instead of a funnel if preferred. Serving immediately after frying ensures optimal texture and flavor.
Ingredients
- 2 egg lightly beaten
- 1 1/2 cup milk
- 1/4 cup brown sugar packed
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- vegetable oil for frying
- 1 tablespoon powdered sugar for dusting
Instructions
- In a bowl, combine eggs, milk, and brown sugar.
- In a separate bowl, combine flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and beat until smooth.
- Add enough oil in an electric skillet or deep fryer so the depth is about 4 inches. You want to have an extra two inches of oil so the funnel cake can cook evenly.
- Heat the oil to 375 degrees.
- Cover the bottom of a funnel spout with your finger and ladle 1/2 cup of batter into funnel.
- Holding the funnel several inches above the skillet, remove your finger from the bottom of the funnel and move the funnel in a spiral motion until all of the batter is released (scraping funnel with a rubber spatula if needed).
- Fry for 2 minutes on each side or until golden brown.
- Drain the funnel cake on paper towels.
- Repeat with remaining batter.
- Dust the funnel cakes with powdered sugar.
- Serve warm.
Notes
- The batter can be poured from a liquid measuring cup as an alternative to using a funnel for shaping the cakes.
