Description
This Cowboy Beans Recipe begins by frying chopped bacon to crispy, then sautéing onion and jalapenos to soften. Ground beef is added and browned before garlic is stirred in. The mixture is then combined with a sauce made from barbecue sauce, ketchup, spicy brown mustard, molasses, red wine vinegar, brown sugar, chili powder, salt, and pepper.
Three types of beans—kidney, butter, and pork and beans—are folded in alongside the cooked bacon. The assembled casserole is baked at 350°F for an hour, thickening the sauce and blending flavors. Hot sauce may be added for additional spice, and shredded cheese can be served on top.
This dish is mild in heat by default but can be adjusted through the choice of peppers and hot sauce to suit preferred spiciness. It's served warm and pairs well with barbecue meals or as a filling side dish.
Ingredients
- ½ pound Bacon chopped
- 1 onion chopped, medium
- 2 jalapeno pepper chopped (or use a bell pepper for a milder version
- 4 cloves garlic chopped
- 1 pound ground beef 80-20
- ¼ cup BBQ sauce use your favorite
- ¼ cup ketchup
- 2 tablespoons brown mustard spicy
- 2 tablespoon molasses
- 2 tablespoons red wine vinegar
- ¼ cup brown sugar
- 1 tablespoon chili powder
- salt to taste
- black pepper to taste
- 2 Kidney Beans 16 ounce cans, drained
- 1 butter beans 16 ounce can, drained
- 1 pork and beans 16 ounce can
- hot sauce to taste
- cheese if desired, shredded; for serving
Instructions
- Heat a large pan or pot to medium heat. A Dutch oven is good for this.
- Cook the bacon in the pan about 5 minutes, or until it becomes nice and crispy. Remove and drain on a paper towel. Remove any excess grease.
- Next, add the chopped onion and peppers. Cook them down 5 minutes to soften.
- Add the ground beef and break it apart with a wooden spoon. Cook it down about 5 minutes to brown it all over, stirring.
- Stir in the garlic and cook another minute, until you can smell that gorgeous garlic.
- Preheat your oven to 350 degrees F.
- Stir the bbq sauce, ketchup, mustard, molasses, vinegar, brown sugar, chili powder, and salt and pepper into the mix.
- Stir in all of the beans and reserved bacon. If you’d like a kicked up version, stir in some hot sauce as well.
- Set it into the oven and bake for 1 hour.
- Remove from heat. Top with cheese, if desired, or enjoy it as it! Serve with extra hot sauce!
Notes
- The spice level is mild but can be adjusted with the choice of peppers or added hot sauce.
