Description

This Cowboy Burger blends 2 pounds of ground beef with diced applewood bacon and freshly grated jalapeños for a spicy smoky flavor. The mixture is seasoned with a commercial burger seasoning and formed into eight patties slightly wider than the bun. Grilling over medium heat for 5 to 6 minutes per side cooks the patties with a slightly pink center but not raw due to the bacon content. Immediately after grilling, a slice of Habanero Jack or sharp cheddar cheese is placed on each patty to melt slightly from residual heat.

The assembled burgers feature brioche buns layered with lettuce, tomato slices, dill pickles, fried onions, and barbecue sauce to add crispness, acidity, sweetness, and crunch, complementing the spicy, rich burger patties.   • 8 lices Habanero Jack cheese or Extra Sharp Cheddar, Happy Farms Preferred
  • ½ cup barbecue sauce Burman's Texas Style
  • 1 cup fried onion Chef's Cupboard brand, French fried
  • 8 leaves butter lettuce
  • 8-16 lices tomato
  • 1 cup dill pickles sliced

Instructions

  1. Preheat the grill to medium heat. Set out a large bowl. Add the ground beef, diced bacon, grated jalapeños, and Burger Grill Seasoning. Mix by hand until well combined.
  2. Divide the meat mixture into 8 equal portions. Press each portion into a patty slightly wider than the buns.
  3. Place the patties on the grill. Cook for 5-6 minutes per side. The insides can be slightly pink in the middle, but not medium-rare because of the bacon. The moment the burgers come off the grill, place a slice of cheese over the top of each patty, so they start to melt.
  4. Stack the burgers on the buns with lettuce, tomato slices, pickles, barbecue sauce, and fried onions on top. Serve warm.
