Description
In the Cowboy Casserole, lean ground beef is browned with diced onion and minced garlic, allowing the flavors to meld. After draining excess fat, corn, cream of mushroom soup, milk, sour cream, half the shredded cheddar, and seasoning with salt and black pepper are stirred in. This mixture is transferred to a baking dish, topped evenly with frozen tater tots in a single layer. The casserole bakes at 375°F for 20 to 25 minutes until the tots are tender and cooked through. Then, the remaining cheddar is sprinkled on top and melted in the oven for 5 minutes, adding a final cheesy crust.
The result is a layered dish with creamy, savory filling and a crispy tater tot crust softened slightly during baking but retaining some texture. The melted cheddar on top adds richness. This recipe serves well as a warming family dinner.
Ingredients
- 1 Pound ground beef lean
- 1 onion diced into small pieces, small
- 1 tsp garlic minced
- 1 cup corn
- 1 cream of mushroom soup 10.75 oz, can
- 1 cup cheddar cheese divided, shredded
- 1/2 cup milk
- 1/4 cup sour cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tater tots 32 oz bag, frozen, bagged
Instructions
- Preheat the oven to 375 degrees F.
- In a large skillet, brown the ground beef with the onion over medium high heat until the beef is no longer pink.
- Drain off any excess grease.
- Stir in the minced garlic and cook for 1 minute until the garlic is fragrant.
- Then stir in the corn, soup, 1/2 cup of the shredded cheese, milk, sour cream, salt and pepper.
- Then pour this beef mixture into the bottom of 9X13 baking pan.
- Top the beef mixture with the tater tots. Make sure to keep the tater tots in a single layer on top.
- Bake for 20-25 minutes until the tater tots are cooked through.
- Then top with the remaining shredded cheese. Bake for 5 minutes to melt the cheese.
- Serve warm and enjoy!
