Cowboy Casserole

This Cowboy Casserole combines seasoned ground beef, a homemade mushroom sauce, corn, diced tomatoes, sour cream, and cheddar cheese, all topped with crispy tater tots. The mushroom soup base adds moisture and depth, while the chili powder and garlic bring a mild kick. Baking melts the cheese and crisps the tots, creating a layered texture contrast between creamy filling and crunchy topping, ideal for comforting family dinners or potlucks.

Description

The Cowboy Casserole recipe centers on ground beef cooked with onion and garlic, mixed with a creamy homemade mushroom soup made from sautéed mushrooms, chicken broth, milk, and flour for thickening. This mixture is seasoned with chili powder and combined with corn, diced tomatoes, and sour cream for tanginess. It's layered in a casserole dish, topped with frozen tater tots and cheddar cheese, then baked until golden. The mushroom soup adds earthiness and creaminess, complementing the savory beef and mild spice. The tater tots crisp up in the oven, providing a satisfying contrast to the tender, cheesy filling.

This dish serves as a hearty main course and pairs well with simple green salads to balance richness. It can be prepared ahead and baked when ready to serve.

For convenience, the mushroom soup can be substituted with canned condensed cream of mushroom soup if short on time. Adjust salt and pepper to taste throughout preparation to control seasoning levels.

Ingredients

Servings

For the mushroom soup (see note 1):

  • 1 tablespoon butter
  • 8 ounces white button mushrooms diced
  • 3/4 cup chicken broth
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • salt freshly ground
  • black pepper freshly ground

For the casserole:

  • 1 pound ground beef
  • 1/2 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 (15.5 ounce) can diced tomatoes drained
  • 1 cup corn frozen
  • 1/4 cup sour cream
  • 1 1/2 cups cheddar cheese divided
  • salt freshly ground
  • black pepper freshly ground
  • 16 ounces tater tots frozen
  • chives or sliced scallions, for garnish, fresh, minced

Instructions

To make mushroom soup (see note 1):

  1. In a large saucepan over medium-high heat, melt butter until foaming. Add mushrooms and cook until they have released most of their liquid, about 5 to 7 minutes.
  2. Stir in chicken broth, onion powder, and garlic powder and bring to a simmer. In a small bowl, whisk together milk and flour.
  3. Stir in milk mixture and cook until soup has thickened, about 1 minute. Season to taste with salt and pepper. Set aside.

To make the casserole:

  1. Preheat oven to 375 degrees. In a large saucepan, add ground beef and onion and cook until browned, about 5 to 7 minutes. Drain well. Stir in garlic and chili powder until fragrant, about 30 seconds.
  2. To the ground beef mixture, add the mushroom sauce, tomatoes, corn, sour cream, and 3/4 cup cheddar cheese. Season to taste with salt and pepper. Add the mixture tto a 2-quart casserole pan. Top the mixture with the frozen potato tots and remaining 3/4 cup cheddar cheese.
  3. Bake uncovered until the casserole is bubbly and the tots are golden brown, about 40 to 50 minutes. Allow cooling for at least 10 minutes. Garnish with fresh chives.

Notes

  • For a shortcut, canned condensed cream of mushroom soup can replace the homemade version in the beef mixture.
  • Season carefully with salt and freshly ground black pepper to enhance flavors without overpowering.
  • Tater tots add a crispy texture on top; ensure they are evenly spread for uniform baking.
