Cowboy Casserole (Crockpot)

This Cowboy Casserole is a hearty crockpot meal layered with browned ground beef, sliced potatoes, onions, garlic, kidney beans, diced tomatoes, and a creamy chicken soup base, all seasoned with herbs and spices. After slow cooking, it is topped with melted cheddar cheese, creating a comforting dish with tender potatoes and a savory blend of flavors. The slow cooking method allows the ingredients to meld and the potatoes to become soft while maintaining a mix of textures.

Description

The Cowboy Casserole assembles browned ground beef with sliced potatoes and onions, garlic, kidney beans (with their liquid), diced tomatoes, and cream of chicken soup in a crockpot. Seasonings include oregano, Italian seasoning, salt, and cracked black pepper, which enhance the savory profile. Cooking on low or high heat for several hours allows the potatoes to soften and flavors to combine fully.

Finishing with cheddar cheese melted on top adds a rich, creamy layer that complements the casserole's mix of tender vegetables and hearty meat. This dish offers a convenient, hands-off option for filling family meals and can serve as a complete dinner on its own.

Suggestions for customization include adding black beans or sweet corn to extend the dish and adjusting seasoning with chili powder or using fire-roasted tomatoes for varied flavor. Ground turkey can substitute beef for a leaner option, and uneven potato slicing can affect cooking consistency. The recipe encourages seasoning and ingredient adjustments to tailor the casserole to personal tastes.

Ingredients

Servings
  • 1 large onion
  • 1 pound ground beef
  • 3 large potato
  • 1 clove garlic
  • 2 cans Kidney Beans do not drain
  • 15 ounce diced tomatoes do not drain
  • 10.5 ounce cream of chicken soup
  • 1/2 teaspoon oregano dried
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper cracked
  • 1.5 cups cheddar cheese grated

Instructions

Get prepped

  1. Slice the onion into half moons, peel and slice the potatoes. Mince the garlic. Brown the ground beef and drain the excess fat.

Cook

  1. Place the browned ground beef, sliced potatoes, onion, garlic, kidney beans, diced tomatoes, cream of chicken soup, oregano, Italian seasoning, salt, and cracked pepper in a crockpot. Stir to combine everything.
  2. Cover the crockpot and cook on high for 4 hours or on low for 8 hours.

Finish

  1. Sprinkle the cheddar cheese on top and cover the crockpot. Let the cheese melt for about 10 minutes before serving.

Notes

  • Cool completely before freezing in a suitable container; thaw and reheat until hot before serving.
  • Add canned black beans, corn, or green chiles to stretch the recipe or vary flavor.
  • Red potatoes can be used without peeling for ease and added texture.
  • Italian seasoning can be substituted with a homemade Tuscan seasoning blend.
  • Chili powder is a good addition for more heat and depth.
  • Fire-roasted diced tomatoes can replace regular diced tomatoes for smoky flavor.
  • Ground turkey works as a leaner meat alternative to ground beef.
  • Slice potatoes evenly to ensure even cooking during slow cooking.
