  • 1 pint cherry tomato
  • 1 black beans 16 oz can, drained and rinsed well
  • 1 black-eyed peas 16 oz can, drained and rinsed well
  • 1 corn 15 oz can, white or yellow, drained
  • ½ cup red onion finely chopped
  • ½ cup green bell pepper chopped
  • ½ cup red bell pepper chopped
  • 1 jalapeno pepper cleaned, seeded and chopped - more or less pepper for preference
  • ½ cup cilantro chopped
  • tortilla chips serving

For the Dressing:

  • 1/2 cup olive oil cup
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lime juice
  • 1 ½ teaspoons cumin ground
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a small bowl, whisk together ingredients for the dressing, set aside.
  2. In a large bowl, add drained beans, black eyed peas and corn.
  3. Cut vegetables and add to large bowl.
  4. Mix well.
  5. Pour dressing over mixture and mix until well combined.
  6. Cover with plastic wrap and chill for at least 30 minutes before serving.
  7. Serve with tortilla chips and enjoy!
