Cowboy Caviar

Cowboy Caviar is a bright and colorful veggie dip that is sure to impress anyone who tries it! This viral cowboy caviar dip comes together in under 15 minutes, and makes for an excellent source of nutrients without compromising taste.

Ingredients

Servings

Dressing

  • 1/3 cup olive oil or avocado oil
  • 2 tablespoons lime juice fresh
  • 2 tablespoons red wine vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Dip

  • 3 Roma tomato make sure to remove seeds, diced
  • 2 avocado make sure to use ripe avocados, diced
  • 1 bell pepper any color or a combo, diced
  • 1 jalapeño make sure to remove seeds, finely diced
  • 1/3 cup parsley chopped, or cilantro
  • 1/2 cup red onion diced
  • 15 ounces black beans rinse well and drain
  • 15 ounces black-eyed peas rinse well and drain
  • 15 ounces sweet corn drained, whole kernel

Instructions

  1. In a small bowl or measuring cup, combine all dressing ingredients and whisk until well blended.
  2. Combine all dip ingredients in a large bowl, and mix gently to combine.
  3. Pour dressing over dip ingredients and gently toss to combine. Serve immediately or cover and place in refrigerator.
  4. Serve with tortilla chips.

Notes

  • Storage – Store the leftover cowboy caviar in an airtight container in the fridge for 3-4 days. Before reserving, make sure you toss the dip a few times with a spatula to recombine. 
  • You can serve the dip immediately after making it, it's delicious after marinating in the fridge for a few hours before serving.
