Cowboy Caviar
Description
This salad combines three colors of chopped bell peppers, Roma tomatoes, finely chopped red onion, grilled or thawed corn, pinto beans, black beans, and black-eyed peas, along with chopped avocado and optional cilantro for a fresh herb note. The variety of beans and vegetables provides a mix of creamy, crunchy, sweet, and tangy elements.
The dressing blends white wine vinegar, extra virgin olive oil, honey, lime juice, chili powder, oregano, and seasonings to create a balanced, slightly sweet and tangy profile with a mild spice from chili powder that complements the salad ingredients. The dressing is whisked together and poured over the salad, then gently mixed to coat all components evenly.
This dish can be served immediately for crisp freshness or refrigerated to allow the flavors to meld. It works well as a side dish at gatherings, barbecues, or as a component of a light meal. The inclusion of multiple beans and vegetables provides variety in texture and an appealing mix of flavors that is both colorful and nutritious.
