  • 3 bell pepper I used red, green and orange bell peppers, chopped
  • 4 Roma tomato chopped
  • ½ red onion finely chopped, large
  • 11 oz grilled sweet corn can or thawed frozen corn
  • 14 oz pinto beans cooked, can, drained and rinsed
  • 14 oz black beans cooked, can, drained and rinsed very well
  • 14 oz black-eyed peas can, drained and rinsed
  • 2 avocado chopped, large
  • ¼ cup cilantro finely chopped (optional, organic

Dressing

  • cup white wine vinegar
  • ½ cup extra virgin olive oil
  • 1 Tablespoon honey
  • lime juice juice of 2 limes
  • 1 teaspoon chili powder
  • 2 teaspoon oregano
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large bowl, mix the bell peppers, onion, corn, beans, and black-eyed peas, chopped tomatoes. Add the sliced avocadoes.
  2. In a small bowl, whisk together white wine vinegar, olive oil, honey, lime juice, chili powder, oregano, salt, and freshly ground black pepper until well combined. Pour dressing over the salad and stir until well combined.
  3. Serve immediately or refrigerate to blend flavors.
