Cowboy Caviar

Healthy and delicious cowboy caviar! This dip is perfect for scooping up with tortilla shells, using as a topping on your tacos and more!

Ingredients

Servings
  • one oz black bean drained and rinsed, canned
  • one oz black-eyed peas drained and rinsed, can
  • one oz corn niblets drained, can
  • one red bell pepper diced
  • 1/2 large red onion chopped
  • 2 medium tomato chopped and drained
  • 2 tablespoon cilantro chopped, fresh

Dressing

  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or white sugar, melted
  • lime juice of 1
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • black pepper fresh, to taste

Instructions

  1. Prepare all of your vegetables. Drain the tomatoes in a colander over the sink for 5-10 minutes, tossing once or twice to help them drain well.
  2. Place all of the vegetables and drained canned beans into a large bowl.
  3. In a jar with a lid, put all of the dressing ingredients. Cover and shake to mix. Adjust the seasonings to your liking, it should be tart and acidic, so don't add too much more honey!
  4. Pour the dressing over the chopped vegetable and beans and toss gently.
  5. Serve with tortilla chips, chicken tacos or anything you eat salsa with!
