Cowboy Caviar

Cowboy Caviar blends black beans, black-eyed peas, fresh vegetables, and a honey mustard dressing to create a vibrant, hearty salad. The combination brings a balance of creamy beans, crisp vegetables, and tangy, sweet dressing. It’s a great make-ahead salad that benefits from chilling, allowing flavors to meld. Serving it with corn chips adds a crunchy contrast, making it a suitable appetizer or side dish.

Description

The Cowboy Caviar recipe combines drained black beans and black-eyed peas with cherry tomatoes, red onion, garlic, corn, red bell pepper, and fresh cilantro. A honey mustard dressing made from olive oil, lime juice, apple cider vinegar, honey, and creamy mustard gives the salad a bright and slightly sweet vinaigrette character. The salad is tossed and chilled for at least an hour to marry the flavors well before adding diced avocado for creaminess and freshness just before serving.

The texture features tender beans alongside crisp corn and pepper, enhanced by the fresh herbs and tangy dressing. The honey mustard dressing contributes acidity and subtle sweetness that balances the natural earthiness of the legumes and the bite of the onion and garlic.

This salad works well served with corn chips, providing a pleasing contrast between the crisp chips and creamy, zesty salad. It is ideal as an appetizer, potluck contribution, or light side dish.
