Description
The Cowboy Caviar recipe combines drained black beans and black-eyed peas with cherry tomatoes, red onion, garlic, corn, red bell pepper, and fresh cilantro. Ingredients
- 15 oz black beans drained and rinsed
- 15 oz black-eyed peas or cannellini beans for a creamier texture - drained and rinsed
- 1 pint cherry tomato halved
- 1 red onion finely diced, small
- 3 cloves garlic minced garlic
- 2 cups corn drained - can also use fresh grilled corn, canned, sweet
- 1 red bell pepper finely diced
- 1/2 cup cilantro finely chopped, fresh
- 1 teaspoon cumin
- 1/4 teaspoon Coriander
- sea salt to taste
- black pepper to taste
- 2 avocado
Honey mustard dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons lime juice
- 1 tablespoon apple cider vinegar
- 2 tablespoon honey or maple syrup
- 1 teaspoon mustard creamy
Instructions
Honey mustard dressing:
- Whisk together all the dressing ingredients in a small bowl until combined, and set aside.
Make the salad:
- Chop and prep all the ingredients. Except for avocado.
- After that, add all the salad ingredients to a large bowl, except for the avocado.
- Pour the dressing over the salad and stir until well combined. Taste and adjust for salt and pepper.
- Cover and chill in the refrigerator for at least 1 hour before serving.
- When ready to serve, stir in the diced avocado, garnish with cilantro, and serve with corn chips!
