Cowboy Caviar
Description
Cowboy Caviar uses hearty black beans and sweet corn as a base, mixed with diced red bell pepper, minced jalapeno for mild heat, fresh cilantro, diced red onions, and ripe avocado to provide varied texture and brightness. The dressing is a balance of lime juice, red wine vinegar, honey, salt, pepper, and chili powder, blending acidity with subtle sweetness and spice.
Preparation involves tossing all the salad ingredients gently with the dressing to coat evenly. The beans and vegetables provide crunch and body, while avocado adds creaminess and softness. This salad can be served right after mixing or chilled to meld flavors further.
It's versatile for a light side dish or snack and can be stored in an airtight container in the refrigerator for up to five days. To maintain avocado freshness, coating with lime juice helps delay browning. Adding a layer of plastic wrap directly on the salad surface when refrigerated minimizes air exposure.
Ingredients
- 15 oz. black beans drained and rinsed
- 15.25 oz. sweet corn drained, whole kernel
- 1 bell pepper diced, small red
- 1 jalapeno pepper minced
- 1/3 cup cilantro finely chopped, fresh
- ¾ cup red onion diced
- 2 avocado diced
Dressing
- ¼ cup lime juice
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- ½ teaspoon black pepper ground
- 1 Tablespoon honey
- ¼ teaspoon chili powder
Instructions
- Combine the dressing ingredients and set aside.
- Place the dip ingredients in a large bowl. Toss to combine. Pour dressing on top and toss to coat evenly.

- If preparing ahead of time: Toss with 1 tablespoon lime juice just before serving. You may also choose to slice up the avocado until just before serving for ultimate freshness.
Notes
- Store Cowboy Caviar in an airtight container, refrigerating up to 5 days for best freshness.
- Press plastic wrap directly on the salad surface to limit air contact and reduce browning.
- Coat sliced avocado with lime juice just before serving to maintain color and freshness.
- Roma tomatoes can be added for extra flavor, chosen for their lower moisture content.
- Variety in beans like chickpeas or pinto beans can be substituted as desired.
- Alternative dressings such as Greek or Italian can be used, adjusting amount accordingly.
