Cowboy Caviar
Description
This Cowboy Caviar recipe combines rinsed black beans and black-eyed peas with diced Roma tomatoes, red and yellow bell peppers, sweet corn, red onion, jalapeño, and chopped cilantro. The mixture is gently folded with diced avocado and fresh lime juice to add brightness. The dressing, made from olive oil, red wine vinegar, minced garlic, honey, salt, and pepper, adds a subtle sweetness and tang to complement the vegetables and beans.
The salad is served cool, with avocado added just before eating to prevent browning. The texture is a mix of tender beans, crunchy vegetables, and creamy avocado, providing a varied mouthfeel. The jalapeño adds a mild heat, balanced by the honey in the dressing.
This dish works well as a dip served with tortilla chips or as a side salad for barbecues or casual meals. Preparing it ahead and allowing flavors to marinate improves the taste, but avocado should be added just before serving to maintain freshness.
