Cowboy Caviar
Description
Cowboy Caviar brings together a mixture of black beans, black-eyed peas, sweet cherry tomatoes, corn kernels, diced red bell pepper, red onion, and jalapeño pepper for a fresh and textured base. The dressing, featuring red wine vinegar, olive oil, cumin, cayenne pepper, honey, and garlic, adds a vibrant, spicy, and slightly sweet note that enhances the vegetables and legumes. Folding in diced avocado and fresh cilantro at the end introduces creaminess and herbal brightness to balance the flavors.
This salad is best served chilled after resting briefly to allow the flavors to meld. It is typically enjoyed with tortilla chips, making it convenient for casual gatherings or as a light snack.
