  • 15 ounce can black beans , drained and rinsed
  • 15 ounce can pinto beans , (or 2 cans if you want more bean), drained and rinsed
  • 15 ounce can corn , drained
  • 6-8 Roma tomato diced
  • 1/2 large sweet onion , diced
  • 2 avocado peeled, seeded and diced
  • 1 bunch cilantro finely chopped, fresh
  • 3 small lime juiced
  • salt to taste, sea salt
  • tortilla chips , for serving (optional)

Instructions

  1. Combine: In a large bowl combine beans, corn, tomatoes, and onion. Stir in avocados and cilantro. 
  2. Season: Squeeze lime juice into the bowl and add a pinch of sea salt. Stir to combine. Add more sea salt, to taste. Refrigerate until ready to serve.

Notes

  • Prepare ingredients in advance but add avocado just before serving to maintain its texture and color.
  • Store leftovers in the refrigerator for 2-3 days for best freshness.
  • Feel free to swap different beans or add vegetables like shredded carrot, cucumber, or celery for variation.
  • Adding cheeses like feta or cheddar can provide extra flavor and creaminess.
