Description
Cowboy Caviar mixes a variety of canned beans with corn and fresh vegetables to create a hearty salad. Ingredients
- 15 ounce can black beans , drained and rinsed
- 15 ounce can pinto beans , (or 2 cans if you want more bean), drained and rinsed
- 15 ounce can corn , drained
- 6-8 Roma tomato diced
- 1/2 large sweet onion , diced
- 2 avocado peeled, seeded and diced
- 1 bunch cilantro finely chopped, fresh
- 3 small lime juiced
- salt to taste, sea salt
- tortilla chips , for serving (optional)
Instructions
- Combine: In a large bowl combine beans, corn, tomatoes, and onion. Stir in avocados and cilantro.
- Season: Squeeze lime juice into the bowl and add a pinch of sea salt. Stir to combine. Add more sea salt, to taste. Refrigerate until ready to serve.
Notes
- Prepare ingredients in advance but add avocado just before serving to maintain its texture and color.
- Store leftovers in the refrigerator for 2-3 days for best freshness.
- Feel free to swap different beans or add vegetables like shredded carrot, cucumber, or celery for variation.
