COWBOY CAVIAR RECIPE
Description
This Cowboy Caviar recipe combines canned black beans and black-eyed peas with fresh sweet corn kernels, diced red onion, green bell pepper, jalapeno pepper, and seeded diced Roma tomatoes. The dressing includes olive oil, lime juice, white wine vinegar, sugar, garlic powder, and salt, whisked together to marry the flavors and lightly sweeten the salad.
The salad ingredients are gently mixed to preserve texture, then optionally combined with chopped cilantro for freshness. It is chilled before serving to blend the flavors and provide a cooling accompaniment for meals or as a snack.
The blend of beans and vegetables delivers a mix of crunchy, tender, and creamy textures combined with a bright, tangy dressing. This dish can serve as a side salad, dip, or topping for other dishes.
