Cowboy Crockpot Pork Chops
Description
Cowboy Crockpot Pork Chops blend thick bone-in pork chops with hearty chunks of peeled russet potato, seasoned simply with garlic and black pepper. The pork chops are first seared in butter to lock in flavor, then layered in the crockpot with potatoes and cream of mushroom soup. Cooking on low heat for several hours ensures the meat becomes tender and retains moisture. Just before serving, heavy whipping cream is stirred in to enrich the sauce, creating a velvety texture that coats the chops and potatoes.
The dish offers a creamy, comforting experience with tender pork paired alongside soft, flavorful potatoes. It requires minimal hands-on time and leverages slow cooking to develop deep, mellow flavors. Ideal for a hearty family meal, it pairs well with a simple green vegetable or salad to balance the richness.
Leftovers store well refrigerated in a sealed container for up to five days. For a thicker sauce, cornstarch mixed with water can be incorporated before reheating. This technique helps customize the sauce consistency according to preference.
Ingredients
- 6 pork chops bone-in
- 4 large russet potato peeled and cut into 1/2" chunks
- 1 teaspoon black pepper
- 2 teaspoons garlic minced
- 2 cans cream of mushroom soup (10 oz cans)
- 1 cup heavy whipping cream
Instructions
- Sear the pork chops in a skillet in butter. Then place in the bottom of a crock pot. Top with potatoes, pepper, minced garlic and cream of mushroom soup.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pork chops are cooked through. 30 minutes before serving, stir in the heavy whipping cream.
- Then the pork chops are ready to serve and enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to five days.
- To thicken a runny sauce, mix ¼ cup water with 2 tablespoons cornstarch and stir into the sauce before warming.
