  • 1 black beans 15 ounce can, rinsed and drained
  • 1 corn 15 ounce can, drained
  • 1 green chilies 4 ounce can, diced, undrained
  • 1 taco seasoning packet
  • 1 pound Velveeta cheese cubed
  • 1 cup cheddar cheese or a Mexican blend, shredded
  • ¼ cup cilantro chopped
  • sour cream guacamole, jalapeños, chopped green onions, optional toppings

Instructions

  1. Brown ground beef: Heat the olive oil in a large skillet (preferably oven-safe) over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Sauté onion and garlic: Add the chopped onion to the skillet and cook for 5-7 minutes, until softened. Add the minced garlic and cook for 1 minute more, until fragrant.
  3. Add tomatoes, beans, corn, and chilies: Stir in the diced tomatoes (undrained), black beans, corn, and green chilies (undrained).
  4. Add taco seasoning: Sprinkle the taco seasoning over the mixture and stir well. Cook for 2-3 minutes, allowing the flavors to meld.
  5. Melt cheese: Reduce heat to low. Add the cubed Velveeta cheese and shredded cheddar cheese to the skillet. Stir constantly until the cheese is melted and smooth.
  6. Stir in cilantro: Stir in the chopped cilantro.
  7. Serve: Serve the Cowboy Queso hot, with tortilla chips, crackers, or toasted baguette slices for dipping. Top with your favorite toppings, such as sour cream, guacamole, jalapeños, and chopped green onions, if desired.
