  • 1 pound mild sausage
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 cup pale ale beer
  • 10 ounces Rotel tomatoes with green chilies, drained
  • 16 ounces Velveeta cheese
  • 2 cups Monterey jack cheese shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • cilantro, tomatoes, and jalapenos, for serving
  • tortilla chips, for serving

Instructions

  1. In a large cast iron skillet, add 1 pound mild sausage. Cook and crumble over medium-high heat until no longer pink. Drain any grease once cooked through.
  2. Stir in 1 teaspoon chili powder, 1 teaspoon onion powder, and 1 cup pale ale beer. Allow the beer to cook and reduce for about 4-5 minutes.
  3. Add in 16 ounces Velveeta cheese and 2 cups Monterey jack cheese. Reduce the heat to medium and melt the cheese, stirring occasionally.
  4. Once the cheese is melted, stir in 1 can black beans,1 cup corn, and 10 ounces Rotel tomatoes with green chilies, and heat through for about 5 minutes.
  5. Garnish with chopped cilantro, tomatoes, and jalapenos,.
  6. Serve warm with tortilla chips,.
