Instructions
- Brown ground beef: Heat the olive oil in a large skillet (preferably oven-safe) over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Sauté onion and garlic: Add the chopped onion to the skillet and cook for 5-7 minutes, until softened. Add the minced garlic and cook for 1 minute more, until fragrant.
- Add tomatoes, beans, corn, and chilies: Stir in the diced tomatoes (undrained), black beans, corn, and green chilies (undrained).
- Add taco seasoning: Sprinkle the taco seasoning over the mixture and stir well. Cook for 2-3 minutes, allowing the flavors to meld.
- Melt cheese: Reduce heat to low. Add the cubed Velveeta cheese and shredded cheddar cheese to the skillet. Stir constantly until the cheese is melted and smooth.
- Stir in cilantro: Stir in the chopped cilantro.
- Serve: Serve the Cowboy Queso hot, with tortilla chips, crackers, or toasted baguette slices for dipping. Top with your favorite toppings, such as sour cream, guacamole, jalapeños, and chopped green onions, if desired.
Notes
- Variations:
- Cheese: Velveeta cheese melts beautifully and creates a smooth and creamy queso. You can use other cheeses, but the texture may be different.
- Spice Level: Adjust the amount of taco seasoning and green chilies to your liking. You can also add some chopped jalapeños for extra heat.
- Slow Cooker: You can keep the queso warm in a slow cooker on low heat.
- Make-Ahead: You can prepare the queso ahead of time and reheat it when ready to serve.
- Spicy Cowboy Queso: Add more chopped jalapeños or a dash of hot sauce to the queso.
- Chorizo Cowboy Queso: Use chorizo instead of ground beef.
- Vegetarian Cowboy Queso: Omit the ground beef and add more beans or vegetables.
- Smoked Queso: Smoke the queso on a grill or smoker for added flavor.
