Description

  • 2 pounds ground beef
  • 1 onion chopped
  • 1 ounce can corn whole kernel
  • 1 ounce can mixed vegetables
  • 1 ounce can ranch beans
  • 1 .5-ounce can tomato chopped
  • 1 ounce can Rotel tomatoes
  • 1 .8-ounce package Spanish rice pre-cooked
  • 32 ounces beef broth use more, if preferred
  • 8 ounces tomato sauce

Instructions

  1. Sauté the ground beef and onion in a large pot over medium heat until the meat has browned. Drain and return to the pot.
  2. Add the remaining ingredients to the pot without draining any of the canned vegetables. If you like more broth, you can add additional beef broth to suit your taste. Cook until the soup is heated through.

Notes

  • For slow cooker preparation, brown meat and onion together first, then transfer to slow cooker and add remaining ingredients. Cook on low for 4 hours.
