Crab Cups with Dill & Mandarins
Description
This appetizer starts by carefully picking through crab meat to avoid any shell fragments. The crab is combined with mayonnaise and fresh cream to form a smooth, rich filling. Chopped fresh dill and lime zest add herbal brightness and citrus aroma. The mixture is gently folded to maintain the crab’s texture.
The filling is spooned into pre-baked shortcrust or phyllo pastry cups, which provide crispness and a buttery base. Each cup is garnished with a small mandarin segment and a sprig of dill, adding a fresh, juicy, and slightly sweet contrast to the creamy crab.
These crab cups are suitable for serving as elegant finger foods at parties or light appetizers. Handling the crab meat carefully and cutting larger mandarin segments ensures comfortable bites with balanced flavors.
Ingredients
- 2 small tins mandarins canned
- 30 shortcrust pastry cups or phyllo tart shells, for canapés
- 200 grams crab meat
- 2 tablespoons mayonnaise
- 1 tablespoon fresh cream
- 2 tablespoons dill fresh sprigs
- 1 lime
- sea salt flakes
- black pepper in grinder
Instructions
- Carefully pick through the crab meat and remove any remnants of shell your seafood purveyor may have missed.
- Place the crab meat into a medium mixing bowl.
- Add the mayonnaise, cream, chopped dill and lime zest.
- Fold until combined.
- Spoon into canapé cups until half full.
- Garnish with 1 small mandarin segment and 1 sprig of dill, (some of the segments may be too large and need to be cut down).
