Crab Pasta Salad
Description
Crab Pasta Salad blends cooked spaghetti noodles with imitation crab meat and a mix of fresh vegetables like peas, broccoli florets, green bell pepper, and sliced green onions. This combination offers a contrast in texture with soft noodles and crunchy vegetables.
The dressing is made creamy with fat-free mayonnaise, Italian salad dressing, and grated Parmesan cheese, which adds a savory depth and gentle sharpness. Tossed together and chilled for a couple of hours, the flavors meld while the pasta remains firm.
This salad can be served as a cold side dish at picnics or potlucks, or as a light lunch. It holds well in the refrigerator for several days, and if it becomes dry over time, adding extra dressing or tossing the noodles in oil before dressing helps maintain the desired texture and flavor.
When serving at events where it may sit out, chilling the bowl in an ice bath helps keep the salad cool and safe to eat.
Ingredients
- 8 ounces spaghetti noodles
- 16 ounces imitation crabmeat chopped
- 1 cup peas thawed, frozen
- 1 cup broccoli florets
- ½ cup green bell pepper chopped
- ¼ cup green onion sliced
- ¾ cup mayonnaise fat-free
- ⅓ cup Italian salad dressing
- 3 Tablespoons Parmesan Cheese grated
Instructions
- Cook pasta according to package directions; drain and rinse in cold water. In a large bowl combine pasta, crab, peas, broccoli, pepper and onion.
- In a small bowl mix together mayonnaise, salad dressing and cheese. Pour over pasta mixture and toss to coat.
- Cover and refrigerate 2 hours.
Notes
- Store in an airtight container in the refrigerator and consume within 3-5 days.
- If the salad becomes dry after a few days, add more salad dressing to revive creaminess.
- Tossing noodles in oil after cooking can reduce how much dressing they absorb.
- Keep the salad refrigerated and avoid leaving it out more than two hours during serving.
- For parties, place the salad bowl in an ice bath to maintain a safe temperature.
