Crab phyllo cups
Description
Crab phyllo cups bring together a flavorful filling made from neufchatel cheese, sour cream, lemon juice, crab meat, mozzarella, and a pinch of cayenne or paprika. These ingredients are mixed into a creamy blend and spooned into ready-made phyllo pastry shells. Topped with finely grated Parmesan cheese, the cups are baked at 350°F until just beginning to brown, creating a crisp shell that contrasts with the creamy filling. The slight tang from lemon juice and the subtle heat from cayenne or paprika underline the delicate crab flavor.
The mixture's balance of creamy cheeses and seafood filling delivers a pleasant texture combination within the flaky phyllo. These cups are best served warm for optimal flavor and texture. They function well as elegant appetizers or party snacks.
Since the filling quantity fills approximately nine cups out of a full box, consider adjusting the fill recipe to make more if you wish to use a whole package of phyllo shells. Using neufchatel cheese instead of cream cheese keeps the dish lighter while maintaining creaminess.
Ingredients
- 2 tablespoon neufchatel cheese (you can use cream cheese but neufchatel is lower fat and tastes great)
- ½ tablespoon sour cream
- 1 teaspoon lemon juice
- ¼ cup crab meat (¼ cup is approx ½ small can/tin)
- 2 tablespoon mozzarella cheese grated
- 1 pinch cayenne pepper or paprika, for non-heat version
- 1 box phyllo cups (phyllo shells)
- 2 tablespoon Parmesan Cheese approx, finely grated
Instructions
- Preheat oven to 350F/175C and lay the phyllo shells on a baking sheet (or you can sit them in a small muffin tin which keeps them in place).
- Mix together the neufchatel cheese, sour cream, lemon juice, crab meat, mozzarella and cayenne pepper/paprika until blended. You can add a little black pepper as well, if you like.
- Spoon enough of the mixture in to the phyllo cups until almost to the top (see notes).
- Sprinkle the parmesan over the top and bake until the tops are just starting to brown, around 15-20 minutes. Best served warm.
Notes
- Filling this recipe will yield enough for about nine phyllo cups, so increase the filling quantity by 1.5 times to fill a whole package.
- You can substitute cream cheese for neufchatel cheese, but neufchatel provides a lower-fat option with great flavor.
- Serve the phyllo cups warm soon after baking for the best texture and taste.
