Crab Smashed Potatoes

Crispy smashed potatoes slathered in butter, topped with creamy crab, given another butter bath before being topped with bacon and baked.

Ingredients

Servings

Potatoes:

  • 6-8 red potato scrubbed, small

Zesty Garlic Butter:

  • 4 tablespoons butter unsalted
  • 2 teaspoons hot sauce
  • 2 teaspoons garlic , minced
  • 1 teaspoon kosher salt coarse
  • 1 teaspoon black pepper ground

Crab Topping:

  • 3 ounce cream cheese , softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons cheese , shredded
  • 2 Worcestershire sauce dashes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 1/2 cup blue crab meat

Garnish:

  • 1/4 cup Bacon , cooked and crumbled
  • scallions
  • parsley chopped
  • chives

Instructions

Prep potatoes:

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper (for easy clean up).
  2. Pierce potatoes well and place in a large microwave safe bowl. Add 1 1/2 cups water. Microwave on high for 8-10 minutes or until potatoes are soft when pricked with a fork.
  3. Place potatoes on a lined baking sheet, smash each with the bottom of a glass. Set aside.

Make Garlic Butter:

  1. In a small microwave safe bowl, combine unsalted butter, hot sauce, coarse Kosher salt, black pepper and garlic.
  2. Heat for 30 seconds on high heat in microwave, stirring well until butter fully melts. Set aside until ready to assemble.

Make Crab Topping:

  1. In a small bowl, combine cream cheese, mayonnaise, cheddar cheese, Worcestershire sauce, garlic powder, onion powder, Kosher salt and white pepper. Mix until well combined. You can use an electric mixer or stand mixer for this portion.
  2. Fold in crab meat.

Assemble:

  1. Baste each potato with melted butter. Evenly divide crab topping onto each potato. Baste crab topping with remaining butter. Evenly divide chopped bacon.
  2. Bake for 12-15 minutes or until potato edges are browned and bubbly.
  3. Remove and garnish with parsley, chives or scallions.
