Crab Stuffed Mushrooms
Description
Crab Stuffed Mushrooms start with cleaning and stem removal of large mushroom caps. The filling combines softened cream cheese with crab meat, sliced green onions, fresh parsley, garlic salt, and shredded Parmesan cheese for flavor and creaminess. The mixture is carefully spooned into the mushroom cavities.
A topping of seasoned breadcrumbs mixed with melted butter is sprinkled over each filled mushroom, creating a crunchy, golden crust during baking. The mushrooms bake at 375°F for about 18 to 20 minutes until the filling is set and the tops are nicely browned.
These stuffed mushrooms serve well warm as an elegant appetizer or a seafood-flavored side dish. The mixture can be prepared ahead and stored refrigerated, then baked before serving. Additionally, the mushroom stems can be saved and chopped for use in soups or casseroles, reducing waste.
Ingredients
- 16 large mushrooms
- 4 ounces cream cheese softened
- 6 ounces crab meat drained, 1 can, or frozen
- 2 green onions thinly sliced
- 2 tablespoons parsley chopped, fresh
- ¼ teaspoon garlic salt
- ⅓ cup Parmesan Cheese shredded
Topping
- ¼ cup seasoned bread crumbs
- 1 tablespoon butter melted
Instructions
- Thaw crab meat if frozen (drain if canned). Preheat the oven to 375°F.
- Mix cream cheese until smooth. Stir in remaining ingredients.
- Wipe mushrooms with a damp paper towel to remove any debris. Using a small spoon or tomato corer, remove stems and spoon out the insides of the mushroom. Discard (or freeze for soup).
- Divide the filling over the mushroom caps. Combine topping ingredients and sprinkle over mushrooms.
- Bake 18-20 minutes or until cooked through and tops are golden.
Notes
- Whip the cream cheese with a hand mixer first to achieve a lighter filling texture.
- Additional cheeses like cheddar or Gruyere can be incorporated for different flavors.
- Prepare and stuff mushrooms up to 24 hours ahead and keep refrigerated until baking.
- These can be frozen and baked from frozen by adding about 10 minutes to baking time.
- Reserve the mushroom stems to use in soups or casseroles to avoid waste.
