The Crack Chicken Casserole combines cooked elbow macaroni and diced chicken with a creamy mixture of softened cream cheese, sour cream, milk, and ranch seasoning. The mix is gently folded with half the bacon and cheddar cheese, then spread in a baking dish. The dish is topped with remaining cheddar, bacon, and fresh green onions before baking until the cheese melts and browns slightly.

Ingredients
- 1.5 cups dry elbow macaroni
- 3 cups chicken breast Cooked & Diced into 1 inch pieces
- 12 lices Bacon cooked and diced
- 8 oz cream cheese softened at room temperature
- 1 cup sour cream
- 1/2 cup milk
- 1 ranch seasoning 1 oz, packet form
- 1/2 tsp black pepper
- 3 cups cheddar cheese divided, shredded
- 2 green onions thinly sliced
Instructions
- Preheat the oven to 375 degrees F and spray a 9X13 baking pan with non-stick cooking spray.
- Cook the pasta based on the package instructions to al dente.
- In a large size bowl, beat together the cream cheese, sour cream, milk, ranch seasoning mix and pepper with a hand held mixer until creamy.
- Then gently mix in the cooked chicken, pasta, half of the cheddar cheese and half of the chopped bacon. Stir by hand carefully until the ingredients are completely combined.
- Then pour this mixture evenly into the baking dish.
- Top with the remaining shredded cheddar cheese, bacon and the sliced green onions.
- Baked for 35-40 minutes until the cheese is melted.
Notes
- Refrigerate leftovers in an airtight container and consume within 5 days for best quality.
- You may use freshly cooked chicken, leftover cooked chicken, or rotisserie chicken to save time.
