Description
These Crack Mashed Potatoes use Russet or Yukon Gold potatoes cooked until fork-tender. After boiling, hot milk, heavy cream, butter, sour cream, ranch seasoning, garlic and onion powders, salt, and pepper are stirred in for a moist and flavorful mash. The potatoes are mashed smooth, then further whipped just enough to add fluff without becoming gluey.
Sharp cheddar cheese and chopped cooked bacon are folded in, providing richness and smoky contrast. The finished dish is garnished with more cheddar, bacon, and fresh green onions for added texture. The balance of seasoning, creamy dairy, and bacon bits gives each bite a satisfying savoriness with a touch of tang from the ranch.
These mashed potatoes are versatile for pairing with roasted meats or grilled vegetables and hold well as a comforting side dish for many occasions.
Ingredients
- 4 pounds potato Russet or Yukon Gold
- 1 teaspoon salt
- 1/2 cup milk hot
- 1/2 cup cream or more, hot
- 1/2 cup butter softened to room temperature, unsalted
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt to taste
- black pepper to taste
- 1 packet ranch seasoning
- 1 1/2 cup cheddar cheese shredded
- 12 Bacon cooked and chopped, slices
Garnish:
- green onions fresh chopped; for garnish
- cheddar cheese shredded
- Bacon chopped; about 3-5 slices
Instructions
- Peel and cut potatoes into quarters lengthwise. Remove any spots, lumps, or knots. Wash until the water runs clear.
- Place potatoes in a large pot (6-quart) and cover with cold water by an inch. Add some salt. Bring to a boil and reduce heat to medium-low. Simmer until fork-tender, for about 15-20 minutes.
- Drain and add the hot milk, hot cream, butter, garlic powder, onion powder, salt, pepper, Ranch powder, and sour cream to the cooked potatoes.
- Mash the potatoes with a potato masher until smooth, adding a little extra milk or cream if needed. Use electric beaters to beat further until smooth and fluffy. Be careful NOT to overbeat.
- Add in the cheddar cheese and chopped bacon. Stir to combine.
- Serve hot, garnished with green onions, chopped bacon, shredded cheese, and butter.
