Ingredients

Servings
  • baby potatoes 2 lbs, halved or quartered
  • Ranch dressing mix 1 packet
  • cheddar cheese shredded; 1 cup
  • Bacon ½ cup, cooked and crumbled
  • sour cream ½ cup
  • green onions ¼ cup, sliced
  • olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Prepare Potatoes:Preheat the oven to 400°F (200°C). Place the halved or quartered baby potatoes on a baking sheet.
  2. Season:Drizzle with olive oil, and sprinkle with ranch seasoning, salt, and pepper. Toss to coat the potatoes evenly.
  3. Bake:Bake the potatoes for 20-25 minutes until golden brown and tender. Stir halfway through to ensure even cooking.
  4. Top with Toppings:Once cooked, sprinkle the potatoes with shredded cheddar cheese, crumbled bacon, and green onions. Return to the oven for 5 minutes until the cheese melts.
  5. Serve:Top with a dollop of sour cream and serve warm.

Notes

  • Make Ahead:Crack Potatoes can be assembled and refrigerated before cooking. Cook in the oven or slow cooker when ready to serve.
  • Customizing the Flavor:For added richness, swap the sour cream for cream cheese. You can also add garlic powder or paprika for extra flavor.
  • Serving Suggestions:These potatoes make a great side dish for steak, chicken, or grilled meats. Pair with a fresh salad for a complete meal.
  • Storage Tips:Store leftover potatoes in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven.
