  • 2 pounds potato peeled and cubed
  • salt to taste
  • black pepper to taste
  • 1 cup ranch dressing
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 2 cups cheddar cheese divided, grated
  • 6 lices Bacon cooked and crumbled
  • 1 green onion chopped

Instructions

  1. Preheat oven to 400°F.
  2. Boil the potatoes in a large pot of water over high heat until fork tender. Drain the water from the pot and transfer the potatoes to a 2-quart baking dish. Season the potatoes with salt and pepper to taste.
  3. In a medium mixing bowl, combine the ranch dressing, sour cream, garlic powder, onion powder, paprika, and 1 cup of the cheese. Pour the mixture all over the potatoes in the baking dish and toss lightly to coat the potatoes.
  4. Bake uncovered at 400°F for 15 minutes.
  5. Remove the casserole from oven and top with the remaining cheese and bacon. Return the dish to the oven and bake for 5-7 minutes, until cheese is melted. Top with the chopped green onion and serve hot.
