Cracker Barrel Country Fried Steak

Cracker Barrel Country Fried Steak features tenderized cube steak coated in a seasoned flour and cracker crumb mixture, dipped in buttermilk and water, then fried until a golden, crispy crust forms. The double dredging and resting period before frying help the breading adhere well, creating a crunchy exterior that contrasts with the juicy meat inside. This classic southern dish is cooked in hot oil to achieve a satisfying fried texture.

Description

To make the country fried steak, a mixture of all-purpose flour, crushed saltine cracker crumbs, salt, and black pepper is prepared to season the coating. The cube steak is first dredged in this dry mixture, then dipped into a buttermilk and water mixture before being dredged again in the dry mix. Allowing the breaded steaks to rest briefly on a wire rack helps the coating set and reduces loss during frying.

Steaks are fried in oil heated to 350°F, cooking for several minutes on each side until the crust is golden brown and edges start to crisp. Careful flipping avoids splatters, and frying at an even temperature ensures the steak is cooked through while remaining juicy inside. The resulting crust is crunchy and flavorful from the cracker crumbs and seasoning, while the meat inside stays tender due to the tenderizing process.

This fried steak can be served with traditional sides like mashed potatoes and gravy, complementing the crispy, savory crust with comforting textures and flavors.

Ingredients

Servings
  • cooking oil for frying
  • cups all-purpose flour
  • ½ cup saltine cracker crumbs
  • teaspoons salt
  • 2 teaspoons black pepper ground
  • 1 cup buttermilk
  • 1/2 cup water
  • 1 pound cube steak tenderized

Instructions

  1. Pour 3 to 4 inches of oil into a deep fryer or large pot, and heat the oil to 350°F.
  2. Combine the flour, cracker crumbs, salt, and pepper in a shallow dish. Mix well.
  3. In another shallow dish, combine the buttermilk and water. Mix well.
  4. Dip the cube steaks into the flour mixture and shake off the excess.
  5. Dip the flour-coated cube steaks into the buttermilk, shake off the excess.
  6. Dredge the cube steaks in the flour again.
  7. Place the breaded steaks on a wire rack resting on a baking sheet. Allow the breading to set up for 5 minutes. This helps to set the breading on the steak.
  8. Place the breaded steaks into the hot oil. Fry the steaks for 3 to 5 minutes on one side, until the sides of the meat start to brown and the top of the meat starts to cook.
  9. Gently flip the steaks away from you to avoid splashing hot oil onto yourself, and fry for 3 to 5 minutes on the other side.
  10. When both sides are golden brown and crispy, remove the steaks from the hot oil and drain on a clean wire rack over a baking sheet.
