Cracker Barrel Meatloaf
Description
This meatloaf recipe integrates crushed Ritz crackers and cheddar cheese into the ground beef, adding moisture and a gentle crumb texture alongside savory onion and bell pepper bits. Eggs and milk help bind the mixture together. The loaf is shaped by hand onto a lined baking pan and baked for 30 minutes initially, then topped with a glaze blend of ketchup, brown sugar, and mustard to create a sticky, flavorful topping during the additional 30-40 minutes of baking.
The final loaf is juicy with a balance of savory and mildly sweet flavors due to the glaze. Allowing the meatloaf to rest before slicing helps retain its juices and maintain slice integrity. It pairs well with hearty sides like mashed potatoes.
Leftovers can be refrigerated in airtight containers for up to 5 days. The resting step is important to prevent drying out and juice loss when serving.
