Cranberry Almond Granola

Description

This granola recipe starts with oats, almonds, and sunflower seeds mixed in a bowl. A warmed mixture of melted coconut oil, vanilla, cinnamon, and salt is poured over and stirred to coat the dry ingredients. Honey is added to bind small clumps without fully saturating the mixture.

The granola is baked low and slow at 275°F, stirred midway to ensure even browning, until it reaches a dark golden color. After removal, dried cranberries are mixed in while the granola is still warm, allowing them to soften slightly and spread evenly.

This results in a crunchy, aromatic granola with nutty flavors from almonds and seeds, sweetness from honey and cranberries, and warmth from cinnamon. It can be eaten with milk, yogurt, or on its own.

  • 4 cups rolled oats
  • 1 cup almonds raw, slivered
  • ½ cup sunflower seeds raw
  • cup coconut oil melted
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • cup honey
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 275°F. Line a large baking tray with baking parchment.
  2. Combine oats, almonds, and sunflower seeds in a large bowl. Toss to distribute.
  3. In a small bowl, combine coconut oil, salt, vanilla, and cinnamon.
  4. Pour oil mixture over oats and toss until all of oats/nuts are lightly covered.
  5. Add honey and stir until small lumps form and no large spots of honey are left.
  6. Dump granola onto prepared baking tray and flatten into an even layer. Do not press down firmly, leave air space as much as possible.
  7. Bake in preheated oven for 25 minutes, then stir to redistribute. Bake for a further 25-35 minutes, stirring 2-3 times until granola is a dark golden brown.
  8. Remove from oven. While still warm, add cranberries and toss to distribute.
  9. Allow to cool completely before storing in an airtight container for up to 1 month.
