Cranberry Banana Oat Muffins

Cranberry Banana Oat Muffins combine ripe bananas, dried cranberries, whole wheat flour, and instant oats into a moist, tender muffin with a hearty texture. A streusel-style topping of oats and brown sugar adds a sweet, crunchy contrast. These muffins balance natural fruit sweetness and chewy texture from oats, suitable as a breakfast item or snack that holds together well and provides subtle tartness from the cranberries.

Description

These muffins feature mashed ripe bananas blended with eggs, buttermilk, and vanilla extract, creating a moist, flavorful base. The dry ingredients include whole wheat flour, instant oats, sugar, baking powder, and baking soda to provide rise and structure. Dried cranberries add fruity bursts throughout. The batter is portioned into lined muffin tins and topped with a mix of oats and brown sugar for a crumbly topping.

Baked at 350°F, the muffins develop a golden exterior with soft interiors, where the oats contribute a chewy texture. The natural sweetness of bananas is complemented by the tartness of cranberries, and the topping provides a contrasting crunch. These muffins are suitable for a wholesome breakfast or on-the-go treat.
